Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 tbsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
Filling
  • 0.75 cup creamy peanut butter
  • 0.75 cup powdered sugar
  • 2 tbsp unsalted butter softened
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter, peanut butter, and sugars until light and fluffy.
  3. Mix in egg and vanilla until combined.
  4. Add dry ingredients and mix just until dough forms.
  5. Shape dough into oval logs and place on baking sheets.
  6. Press with a fork and bake for 10–12 minutes.
  7. Cool completely before filling.
  8. Mix filling ingredients until smooth and sandwich cookies together.

Notes

Let cookies cool fully before filling to prevent melting.
