  • 1 lb salmon fillet, cut into cubes
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp minced garlic
  • 1 tsp grated ginger
  • 2 cups cooked rice
  • 1 avocado, sliced
  • 1 cucumber, diced
  • 1 tbsp sesame seeds
  • 1 tbsp chopped cilantro or green onion
  • lime wedges for serving

Method
 

  1. Whisk soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger together to make glaze.
  2. Marinate salmon cubes in half the glaze for 15–20 minutes.
  3. Cook salmon in a skillet until caramelized and cooked through, brushing with extra glaze.
  4. Serve over rice with avocado, cucumber, sesame seeds, and lime wedges.

Notes

Delicious served warm with spicy mayo drizzle and fresh herbs.
