  • 4 boneless, skinless chicken breasts
  • salt and pepper to taste
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard
  • 0.25 cup honey
  • 1 tbsp lemon juice
  • 1.5 cups uncooked white rice long-grain or basmati
  • 3 cups chicken broth
  • 0.5 tsp smoked paprika optional
For Garnish
  • 2 tbsp fresh parsley chopped

Method
 

  1. Season chicken with salt and pepper and sear in olive oil until golden brown on both sides.
  2. Remove chicken; in the same skillet, melt butter and sauté garlic.
  3. Add Dijon, whole-grain mustard, honey, and lemon juice to create sauce.
  4. Stir in rice and coat with sauce, then pour in broth and paprika.
  5. Place chicken on top, cover, and simmer until rice is tender and liquid absorbed.
  6. Fluff rice, drizzle sauce, and garnish with parsley before serving.
