- Preheat oven to 400°F (200°C).
- Peel and chop carrots, parsnips, sweet potato, and onion.
- Whisk olive oil, honey, garlic, thyme, salt, and pepper in a bowl.
- Toss vegetables with the honey mixture until evenly coated.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 25–30 minutes, stirring halfway through.
- Remove from oven, garnish with herbs, and serve warm.
Notes
Try adding beets or turnips for more variety and color.
