Ingredients
  

Casserole Base
  • 1.5 lbs fresh green beans trimmed
  • 4 tablespoons unsalted butter
  • 1 cup yellow onion diced
  • 3 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 3 tablespoons all-purpose flour
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme
  • 0.75 cup Parmesan cheese grated
  • 1.5 cups crispy fried onions

Method
 

  1. Blanch green beans until tender-crisp and set aside.
  2. Sauté onion, garlic, and mushrooms in butter until golden.
  3. Add flour, then whisk in stock and cream until thickened.
  4. Season sauce and stir in Parmesan cheese.
  5. Fold in green beans and transfer to baking dish.
  6. Top with crispy onions and bake until bubbly and golden.

Notes

Add onions just before baking to keep them crisp.
