Ingredients
  

Soup Base
  • 2 tbsp unsalted butter
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 3 cups chicken broth
  • 3 cups broccoli florets chopped
  • 1 cup milk or half-and-half
  • 2 cups sharp cheddar cheese shredded

Equipment

  • Immersion blender
  • Cutting board
  • Knife

Method
 

  1. Sauté butter, onion, and garlic in Instant Pot.
  2. Stir in flour and cook briefly.
  3. Add broth, broccoli, and seasoning.
  4. Pressure cook on high for 5 minutes.
  5. Quick release, blend soup, then stir in milk and cheese.

Notes

Add cheese after blending for the smoothest texture.
