Ingredients
  

Vegetables
  • 1 lb parsnips peeled and sliced
  • 1 lb carrots peeled and sliced
  • 1 cup vegetable broth
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Instant Pot
  • Vegetable peeler
  • Knife

Method
 

  1. Add broth to Instant Pot and place vegetables inside.
  2. Pressure cook on high for 3 minutes.
  3. Quick release pressure and drain excess liquid.
  4. Add butter, oil, garlic, salt, and pepper.
  5. Sauté briefly until coated and heated through.

Notes

Finish with honey or herbs for extra flavor.
