  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 medium leeks sliced
  • 4 large potatoes peeled and chopped
  • 3 medium carrots sliced
  • 2 medium parsnips sliced

Method
 

  1. Sauté onion and leeks in olive oil until softened.
