Ingredients
  

Lentil Meatballs
  • 1.5 cups cooked lentils well-drained
  • 0.5 cup breadcrumbs
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 large egg
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh dill chopped

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mash lentils gently in a bowl, leaving some texture.
  3. Sauté onion and garlic in olive oil until soft.
  4. Combine all ingredients and mix well.
  5. Shape into balls and place on baking sheet.
  6. Bake for 20–25 minutes, flipping halfway.

Notes

Serve warm with tzatziki and fresh herbs.
