Ingredients
  

Quiche Base
  • 6 eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese cheddar or Swiss
  • 1.5 cups fresh spinach chopped
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 0.5 cup milk any kind
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp paprika
  • 1 tbsp olive oil

Method
 

  1. Sauté onions, garlic, and spinach until softened.
  2. Whisk eggs, cottage cheese, shredded cheese, milk, and seasonings.
  3. Combine spinach mixture with egg mixture.
  4. Pour into pie dish and bake until set and golden.

Notes

Let cool before slicing to help the quiche set.
