Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 egg yolks
  • 1 egg
  • 2 tsp vanilla extract
  • 0.25 cup heavy cream
Brûlée Topping
  • 0.5 cup granulated sugar for topping

Equipment

  • Mixing bowls
  • Baking sheet

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Whisk flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy.
  4. Add eggs, vanilla, and cream.
  5. Mix in dry ingredients until combined.
  6. Scoop and flatten dough balls.
  7. Bake 10–12 minutes and cool completely.
  8. Sprinkle sugar and torch until caramelized.

Notes

Do not stack after torching. Add topping just before serving for best crunch.
