Ingredients
  

Brownie Base
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
Pecan Pie Topping
  • 1 cup chopped pecans
  • 1/2 cup brown sugar packed
  • 1/2 cup corn syrup (light or dark)
  • 2 tbsp unsalted butter melted
  • 1 large egg beaten
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with paper cups.
  2. Prepare brownie batter by mixing cocoa powder, melted butter, sugar, eggs, vanilla, salt, and flour until just combined.
  3. Spoon 1 tablespoon batter into each muffin cup. Bake for 8–10 minutes until partially set.
  4. In a bowl, mix pecans, brown sugar, corn syrup, melted butter, egg, vanilla, and salt for the topping.
  5. Remove brownies from oven, top with pecan mixture, and bake for 12–15 minutes until set.
  6. Cool completely before removing from pan. Serve and enjoy.

Notes

For an extra indulgent twist, stir chocolate chips into the brownie base or add a splash of bourbon to the pecan topping. These bites freeze well for up to 3 months.
