- Preheat oven to 350°F (175°C). Grease a mini muffin tin or line with paper cups.
- Prepare brownie batter by mixing cocoa powder, melted butter, sugar, eggs, vanilla, salt, and flour until just combined.
- Spoon 1 tablespoon batter into each muffin cup. Bake for 8–10 minutes until partially set.
- In a bowl, mix pecans, brown sugar, corn syrup, melted butter, egg, vanilla, and salt for the topping.
- Remove brownies from oven, top with pecan mixture, and bake for 12–15 minutes until set.
- Cool completely before removing from pan. Serve and enjoy.
Notes
For an extra indulgent twist, stir chocolate chips into the brownie base or add a splash of bourbon to the pecan topping. These bites freeze well for up to 3 months.
