Ingredients
  

Apple Filling
  • 2 medium apples, peeled and diced
  • 2 tbsp unsalted butter
  • 2 tbsp brown sugar
  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp water
Cookies
  • 2 refrigerated pie crusts
  • 1 egg (for egg wash)
  • 1 tbsp water for egg wash
  • salted caramel sauce

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Cook apples with butter, sugars, cinnamon, nutmeg, lemon juice, and salt until softened.
  2. Stir in cornstarch slurry and cook until thickened.
  3. Cut pie crust into circles and fill with apple mixture.
  4. Add lattice topping and seal edges.
  5. Brush with egg wash and bake at 375°F for 14–16 minutes.
  6. Drizzle warm cookies with salted caramel.

Notes

Best served warm. Add extra caramel just before serving.
