Cookies
  • 2 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup buttermilk
Filling
  • 1 cup unsalted butter, softened
  • 1.5 cups powdered sugar
  • 7 oz marshmallow fluff
  • 1 tsp vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, cocoa, baking soda, and salt.
  3. Cream butter and sugar until fluffy, then add egg and vanilla.
  4. Add dry mixture and buttermilk alternately until smooth.
  5. Scoop batter onto sheets and bake 10–12 minutes.
  6. Beat butter, marshmallow fluff, powdered sugar, and vanilla to make filling.
  7. Sandwich filling between two cookies.

Notes

Refrigerate assembled whoopie pies for cleaner edges and better texture.
