  • 2 tbsp olive oil
  • 1 lb chicken breast, cubed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 9 oz refrigerated cheese tortellini
  • 1 tbsp butter
  • 0.5 tsp crushed red pepper flakes (optional)
  • 0.25 cup chopped sun-dried tomatoes (optional)
  • 2 tbsp fresh basil, chopped for garnish

Method
 

  1. Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until golden brown.
  2. Remove chicken and set aside. Add butter and garlic to the skillet; sauté 30 seconds.
  3. Add chicken broth and heavy cream, scraping up browned bits from the pan.
  4. Bring to a simmer and add tortellini. Cook 5–6 minutes until tender.
  5. Stir in Parmesan cheese until melted and creamy.
  6. Return chicken to skillet, add sun-dried tomatoes and red pepper flakes, and simmer 2 minutes.
  7. Garnish with basil and serve warm.
