Soup Base
  • 1 lb Italian sausage mild or hot
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery diced
  • 2 cans white beans drained and rinsed
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 cups baby spinach
  • 2 tbsp olive oil
  • parmesan cheese for serving

Method
 

  1. Heat olive oil in a large pot and brown the Italian sausage.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and seasonings.
  4. Add tomatoes and white beans and mix well.
  5. Pour in chicken broth and water; bring to a boil, then simmer.
  6. Simmer for 20–25 minutes.
  7. Add spinach and cook until wilted.
  8. Serve with parmesan and parsley.

Notes

This soup freezes beautifully; add fresh spinach when reheating.
