Method
- Heat olive oil in a large pot and brown the Italian sausage.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and seasonings.
- Add tomatoes and white beans and mix well.
- Pour in chicken broth and water; bring to a boil, then simmer.
- Simmer for 20–25 minutes.
- Add spinach and cook until wilted.
- Serve with parmesan and parsley.
Notes
This soup freezes beautifully; add fresh spinach when reheating.
