Ingredients
  

Cookie Dough
  • 2.75 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • orange food coloring to tint dough
  • black icing gel or melted chocolate for faces
  • icing sugar and milk optional glaze

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, and salt together in a bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually add dry ingredients to form dough.
  6. Tint dough orange with food coloring.
  7. Roll out dough to 1/4 inch thick and cut pumpkin shapes.
  8. Bake for 8–10 minutes until edges are golden.
  9. Cool completely on wire racks.
  10. Decorate cooled cookies with black icing or chocolate faces.

Notes

Store cookies in an airtight container for up to 5 days. Add pumpkin spice for an autumn twist.
