- Pat steaks dry and season both sides with salt and pepper.
- Heat olive oil in skillet over medium-high heat.
- Sear steaks 3–4 minutes per side, then baste with butter.
- Remove and rest steaks.
- Sauté garlic in butter, add broth, cream, and mustard.
- Simmer sauce until thickened, then pour over steak.
- Garnish with parsley and serve.
Notes
For the best flavor, let steaks rest before slicing. This prevents juices from escaping.
