Ingredients

  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 12 oz smoked sausage sliced into rounds
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt adjust to taste
  • 2 green onions chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
  2. Steam or blanch the broccoli and cauliflower for 3–4 minutes until slightly tender but not mushy. Drain well.
  3. In a large skillet, melt butter over medium heat. Add garlic and cook until fragrant, about 1 minute.
  4. Stir in heavy cream, cheddar, mozzarella, Parmesan, paprika, salt, and pepper. Whisk until the sauce is smooth and creamy.
  5. Add the sausage slices to the sauce and stir to coat.
  6. Place the broccoli and cauliflower into the prepared baking dish. Pour the cheesy sausage sauce over the top and gently toss to combine.
  7. Spread evenly and top with extra cheese if desired.
  8. Bake for 25–30 minutes, until golden and bubbling.
  9. Garnish with chopped green onions and serve hot.

Notes

For extra flavor, try adding a pinch of red pepper flakes or using smoked gouda instead of mozzarella. Great for freezing and reheating.
