Base Mixture
  • 1 cup cottage cheese low-fat or 2%
  • 1 cup old-fashioned oats
  • 0.5 cup vanilla protein powder
  • 2 tbsp honey or maple syrup
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 0.5 cup fresh blueberries
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 2 tbsp almond flour optional, to adjust texture

Method
 

  1. Blend cottage cheese, honey, lemon juice, vanilla, and zest until smooth.
  2. In a bowl, mix oats, protein powder, and salt. Combine with blended mixture.

  4. If too sticky, add almond flour or extra oats.
  5. Roll into bite-sized balls and chill for 1–2 hours.
  6. Store in the fridge or freezer.
