Ingredients
  

  • 4 salmon fillets
  • 1.5 lb baby potatoes halved
  • 3 cups broccoli florets
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 lemon juiced and zested
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp fresh parsley chopped

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss potatoes with olive oil, salt, and pepper. Roast 20 minutes.
  3. Melt butter and sauté garlic briefly. Stir in lemon juice and zest.
  4. Add salmon and broccoli to the pan. Season broccoli with olive oil, salt, and pepper.
  5. Spoon lemon butter over salmon and return to oven.
  6. Roast 12–15 minutes until salmon flakes easily.
  7. Garnish with parsley and serve warm.
