- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Whisk together flour, sugar, baking powder, salt, chia seeds, and lemon zest.
- Cut cold butter into dry ingredients until mixture resembles coarse crumbs.
- Whisk cream, egg, lemon juice, and vanilla; stir into dry mixture until just combined.
- Shape dough into 1-inch thick circle, cut into 8 wedges.
- Place wedges on baking sheet, brush with cream, and bake 15–18 minutes until golden.
- Cool slightly, then drizzle with lemon glaze before serving.
Notes
Best enjoyed the same day. For variation, add blueberries to the dough before baking.
