Ingredients
  

Oat Crust & Topping
  • 1.5 cups rolled oats
  • 1.25 cups all-purpose flour
  • 0.75 cup brown sugar packed
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 0.75 cup unsalted butter melted
Lemon Filling
  • 2 eggs large
  • 0.75 cup granulated sugar
  • 0.25 cup all-purpose flour
  • 0.5 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line pan with parchment.
  2. Mix oats, flour, brown sugar, salt, and baking powder.
  3. Add melted butter and mix until crumbly.
  4. Press most mixture into pan and pre-bake 10 minutes.
  5. Whisk filling ingredients until smooth.
  6. Pour filling over crust and top with reserved crumble.
  7. Bake 20–25 minutes until set and golden.
  8. Cool completely, chill, slice, and serve.

Notes

Chill before slicing for best texture and clean edges.
