- Preheat oven to 350°F (175°C) and line pan with parchment.
- Mix oats, flour, brown sugar, salt, and baking powder.
- Add melted butter and mix until crumbly.
- Press most mixture into pan and pre-bake 10 minutes.
- Whisk filling ingredients until smooth.
- Pour filling over crust and top with reserved crumble.
- Bake 20–25 minutes until set and golden.
- Cool completely, chill, slice, and serve.
