Ingredients
  

Stroganoff
  • 1 cup brown lentils rinsed
  • 12 oz mushrooms sliced
  • 1 medium yellow onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tbsp Dijon mustard
  • 2 tbsp all-purpose flour
  • 3 cups vegetable broth
  • 1 cup sour cream or plant-based alternative

Method
 

  1. Heat oil in a large skillet and cook onion until soft.
  2. Add garlic and mushrooms, cooking until mushrooms are browned.
  3. Stir in paprika and flour, cooking briefly.
  4. Add lentils, broth, mustard, and simmer until lentils are tender.
  5. Stir in sour cream, season, and serve warm.

Notes

Adjust thickness with extra broth if needed.
