Ingredients
  

  • 4 large russet potatoes
  • 1 lb sirloin or ribeye steak cut into cubes
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 0.5 cup sour cream
  • 0.25 cup heavy cream
  • 0.5 cup shredded cheddar cheese optional
  • 1 tsp chili flakes to taste
  • 2 tbsp fresh parsley chopped
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Scrub potatoes, poke with fork, rub with oil and salt, bake 50–60 minutes.
  2. Heat skillet with 1 tbsp olive oil. Sear steak cubes 2–3 minutes per side, season with salt, pepper, and paprika. Remove to rest.
  3. In same skillet, melt butter. Add garlic and sauté until fragrant. Stir in sour cream, heavy cream, and chili flakes. Whisk smooth.
  4. Slice baked potatoes in half. Fluff insides with fork. Sprinkle cheese if desired.
  5. Top potatoes with steak cubes, drizzle sauce, garnish with parsley and chili flakes.
  6. Serve immediately while hot and creamy.

Notes

Best served fresh, but you can prep potatoes ahead and reheat before assembling. Customize toppings with bacon, green onions, or blue cheese.
