Method
- Preheat oven to 400°F (200°C). Scrub potatoes, poke with fork, rub with oil and salt, bake 50–60 minutes.
- Heat skillet with 1 tbsp olive oil. Sear steak cubes 2–3 minutes per side, season with salt, pepper, and paprika. Remove to rest.
- In same skillet, melt butter. Add garlic and sauté until fragrant. Stir in sour cream, heavy cream, and chili flakes. Whisk smooth.
- Slice baked potatoes in half. Fluff insides with fork. Sprinkle cheese if desired.
- Top potatoes with steak cubes, drizzle sauce, garnish with parsley and chili flakes.
- Serve immediately while hot and creamy.
Notes
Best served fresh, but you can prep potatoes ahead and reheat before assembling. Customize toppings with bacon, green onions, or blue cheese.
