Ingredients
  

Burrito Bowls
  • 2 cups cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 lb cooked protein of choice seasoned
  • 1 cup shredded lettuce
  • 1 avocado sliced or cubed
  • 1 cup salsa or pico de gallo
  • 0.5 cup shredded cheese
  • 0.25 cup sour cream or Greek yogurt
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Prepare rice and season with lime and cilantro if desired.
  2. Warm and season black beans and corn.
  3. Cook and season protein of choice.
  4. Assemble bowls with rice, beans, corn, and protein.
  5. Add lettuce, salsa, avocado, and cheese.
  6. Finish with sour cream and toppings.
