Ingredients
  

  • 4 cups frozen French fries or hand-cut russet potatoes
  • 1 tablespoon Cajun seasoning
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded Monterey Jack cheese
  • 6 slices bacon cooked and crumbled
  • 0.25 cup green onions chopped
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 0.25 cup mayonnaise
  • 1 tablespoon hot sauce
  • 1 teaspoon lemon juice

Method
 

  1. Preheat oven to 425°F (220°C). Bake fries until golden and crispy.
  2. In saucepan, make cheese sauce with butter, flour, milk, and cheeses.
  3. Mix voodoo sauce ingredients in bowl: mayo, hot sauce, lemon juice.
  4. Season fries with Cajun spice, top with cheese sauce, bacon, and onions.

Notes

Serve hot and fresh for best flavor. Pairs great with grilled meats or beer.
