Ingredients
  

Chia Base
  • 3 tbsp chia seeds
  • 1 cup coconut milk
  • 1 tbsp honey or maple syrup
  • 0.5 tsp vanilla extract
Fruit Layers
  • 1 cup mango chunks
  • 1 cup dragon fruit

Equipment

  • Mixing bowls
  • Blender

Method
 

  1. Whisk chia seeds, milk, sweetener, and vanilla.
  2. Refrigerate at least 4 hours or overnight.
  3. Blend mango until smooth.
  4. Blend dragon fruit until smooth.
  5. Layer chia pudding with fruit purees and serve chilled.

Notes

Stir pudding after 30 minutes to prevent clumping.
