Ingredients
  

Mango Layer
  • 2 cups mango puree
  • 2 ripe mangoes diced
  • 0.5 cup mango juice for soaking ladyfingers
Cream Layer
  • 1 cup coconut cream chilled
  • 1 cup dairy-free cream cheese or vegan mascarpone
  • 0.33 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp lime zest optional
Assembly
  • 18-20 eggless ladyfinger biscuits
  • 2 tbsp shredded coconut optional garnish

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Blend ripe mangoes until smooth to make mango puree.
  2. Beat dairy-free cream cheese and maple syrup until smooth.
  3. Add chilled coconut cream and whip until light and fluffy.
  4. Mix in vanilla extract and lime zest.
  5. Quickly dip ladyfingers into mango juice.
  6. Arrange a layer of soaked ladyfingers in a serving dish.
  7. Spread mango puree over the biscuits.
  8. Add a layer of coconut cream filling and diced mango.
  9. Repeat the layers once more.
  10. Chill for at least 4 hours before serving.

Notes

For best flavor, use very ripe mangoes and allow the tiramisu to chill overnight.
