Ingredients

  • 4 cups cooked navy beans or two 15 oz cans, drained
  • 8 slices thick-cut bacon chopped
  • 1 medium red onion diced
  • 3 cloves garlic minced
  • 1/2 cup pure maple syrup
  • 1/4 cup dark brown sugar packed
  • 1/4 cup ketchup
  • 2 tbsp tomato paste
  • 2 tbsp Dijon mustard
  • 1/3 cup bourbon
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper optional
  • 1/2 cup water

Equipment

Method
 

  1. Cook bacon in skillet until crispy. Remove and set aside.
  2. Sauté onion and garlic in bacon fat.
  3. Add bourbon, deglaze the pan, and cook 1 minute.
  4. Stir in maple syrup, brown sugar, ketchup, tomato paste, mustard, paprika, salt, and pepper.
  5. Add beans and half the bacon. Stir and bake 45–50 minutes at 350°F until thickened.
  6. Top with remaining bacon before serving.

Perfect make-ahead side dish for barbecues and gatherings. The bourbon flavor deepens as it sits.
