Marinated Bean Ingredients
  • 2 cans white beans drained and rinsed
  • 0.25 cup olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 0.25 tsp red pepper flakes optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon zest zest of one lemon
  • 0.25 cup fresh parsley chopped
  • 0.25 cup red onion optional, finely chopped

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Place rinsed beans in a mixing bowl.
  2. Whisk olive oil, vinegar, garlic, herbs, red pepper flakes, salt, pepper, and lemon zest.
  3. Pour marinade over beans and gently toss.
  4. Add parsley and optional onion.
  5. Chill for at least 30 minutes before serving.
