Base
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp tomato paste
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 tsp dried oregano
  • 4 cloves garlic, minced
  • 1/4 tsp crushed red pepper flakes
  • 1 cup uncooked orzo pasta
Sauce
  • 1/2 cup dry white wine sauvignon blanc or pinot grigio work well
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream or whipping cream
Finish
  • 2 cups cooked shredded rotisserie chicken
  • 1/2 cup freshly grated parmesan cheese
  • 1 small handful fresh basil, torn or chopped
  • to taste salt and pepper

Method
 

  1. Heat olive oil and butter in a large, heavy-bottomed pot over medium-high heat.
  2. Add tomato paste, chopped sun-dried tomatoes, oregano, minced garlic, crushed red pepper flakes, and uncooked orzo. Stir to combine and toast the orzo lightly for 1-2 minutes.
  3. Pour in the white wine and cook until mostly absorbed, about 2-3 minutes.
  4. Add chicken broth and heavy cream. Bring to a gentle simmer and cook until orzo is tender and most liquid is absorbed, about 12-15 minutes, stirring occasionally.
  5. Stir in cooked shredded chicken, parmesan cheese, and fresh basil. Season with salt and pepper to taste.
  6. Serve warm, garnished with extra parmesan or basil if desired 🍴🌿.
