Ingredients
  

Main
  • 1 lb potato gnocchi
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 1 cup heavy cream
  • 0.5 cup broth
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • 1 cup spinach

Equipment

  • Large skillet

  • Wooden spoon

Method
 

  1. Cook gnocchi according to package instructions and set aside.
  2. Melt butter in a skillet and sauté garlic.
  3. Add sun-dried tomatoes and cook briefly.
  4. Pour in cream and broth, simmer until slightly thickened.
  5. Stir in parmesan and seasonings.
  6. Add gnocchi and toss to coat.
  7. Add spinach and cook until wilted.

Notes

Use fresh parmesan and avoid high heat to keep sauce smooth.
