Main Soup
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 chicken breasts, diced
  • 1 tsp salt plus more to taste
  • 0.5 tsp black pepper
  • 0.5 tsp crushed red pepper flakes optional
  • 0.5 tsp Italian seasoning
  • 0.5 cup sun-dried tomatoes, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tbsp flour optional, for thickening
  • fresh basil leaves for garnish

Method
 

  1. Heat olive oil and butter in a pot over medium heat. Add onion and garlic; sauté until fragrant.
  2. Add chicken, seasonings, and cook until browned.
  3. Stir in sun-dried tomatoes, then pour in chicken broth and simmer 10 minutes.
  4. Add flour (optional) to thicken, then stir in cream.
  5. Add Parmesan and spinach, stirring until cheese melts and spinach wilts.
  6. Serve warm with fresh basil and crusty bread.

Notes

Serve immediately for best texture. Add extra broth if soup thickens when reheating.
