Method
- Line a baking sheet with parchment paper. Place popcorn in a large mixing bowl.
- In a saucepan, melt butter. Add brown sugar, corn syrup, and salt. Bring to a boil and cook 4–5 minutes.
- Remove from heat and stir in baking soda and vanilla.
- Pour caramel over popcorn and toss to coat.
- Fold in 1 ½ cups mini marshmallows while caramel is warm.
- Spread onto prepared baking sheet. Sprinkle remaining marshmallows on top.
- Cool 30 minutes, then break into clusters.
Notes
For extra flavor, drizzle melted chocolate over cooled caramel corn.
