Ingredients
  

  • 12 cups popped popcorn
  • 1 cup unsalted butter
  • 1 cup brown sugar, packed
  • 0.5 cup light corn syrup
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 2 cups mini marshmallows (divided)

Method
 

  1. Line a baking sheet with parchment paper. Place popcorn in a large mixing bowl.
  2. In a saucepan, melt butter. Add brown sugar, corn syrup, and salt. Bring to a boil and cook 4–5 minutes.
  3. Remove from heat and stir in baking soda and vanilla.
  4. Pour caramel over popcorn and toss to coat.
  5. Fold in 1 ½ cups mini marshmallows while caramel is warm.
  6. Spread onto prepared baking sheet. Sprinkle remaining marshmallows on top.
  7. Cool 30 minutes, then break into clusters.

Notes

For extra flavor, drizzle melted chocolate over cooled caramel corn.
