Chicken Meatballs
  • 1 lb ground chicken
  • 0.33 cup breadcrumbs or almond flour
  • 0.25 cup grated parmesan
  • 1 egg
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tbsp parsley chopped
  • 2 tbsp olive oil
Garlic Butter Sauce
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 1 tbsp lemon juice optional
Cauliflower Rice
  • 4 cups cauliflower rice
  • 1 tbsp butter
  • 0.5 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Mix chicken, breadcrumbs, parmesan, egg, garlic, and seasonings.
  2. Roll into meatballs.
  3. Sear meatballs until golden and cooked through.

  5. Cook cauliflower rice with butter and garlic powder.
  6. Assemble meal prep bowls with rice and meatballs.
