Ingredients
  

Chicken Marinade
  • 1.5 lb boneless skinless chicken thighs
  • 3 tbsp olive oil
  • 1 lemon juiced
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Feta Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber excess moisture removed
  • 0.5 cup crumbled feta cheese
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic minced

Equipment

  • Mixing bowls
  • Skillet or grill pan

Method
 

  1. Whisk marinade ingredients and coat chicken. Marinate 30 minutes.
  2. Mix feta tzatziki ingredients and chill.
  3. Cook chicken 5–7 minutes per side until fully cooked.
  4. Rest and slice chicken.
  5. Assemble gyros with pita, chicken, vegetables, and sauce.

Notes

For best flavor, marinate chicken up to 24 hours.
