Ingredients
  

Mediterranean Chicken Stir Fry
  • 1 lb chicken breast, sliced
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup kalamata olives pitted
  • 1 lemon, juiced
  • 2 tbsp fresh parsley, chopped

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Season chicken with salt, pepper, paprika, and oregano.
  2. Cook chicken in olive oil until golden and cooked through.
  3. Cook bell peppers, onion, zucchini, and garlic until tender-crisp.
  4. Add tomatoes and olives; cook until tomatoes soften.
  5. Return chicken to pan and toss together.
  6. Finish with lemon juice and parsley before serving.

Notes

Serve with feta for added Mediterranean flavor.
