Ingredients
  

Soup Base
  • 1.5 cups dried lentils rinsed
  • 2 tbsp extra virgin olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 14.5 oz diced tomatoes
  • 6 cups vegetable broth

Equipment

Method
 

  1. Sauté onion in olive oil until softened.
  2. Add garlic, carrots, celery, and spices; cook briefly.
  3. Stir in tomatoes, lentils, and broth.
  4. Simmer until lentils are tender.
  5. Finish with lemon juice and garnish.
