Ingredients
  

Mediterranean Salad
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumbers, diced
  • 0.5 cup red onion, thinly sliced
  • 0.75 cup Kalamata olives
  • 1 cup feta cheese, crumbled
  • 1 cup bell peppers, chopped (optional)
  • 0.25 cup fresh parsley, chopped
  • 0.25 cup olive oil
  • 3 tbsp lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • salt and pepper to taste

Method
 

  1. Combine tomatoes, cucumbers, onion, olives, feta, peppers, and parsley in a large bowl.
  2. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Pour dressing over salad and toss gently.
  4. Chill 10 minutes before serving.
