Ingredients
  

Chicken Bombs
  • 1.5 lbs chicken breast cut into chunks
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tbsp ranch seasoning
  • 8 oz mozzarella cheese cut into cubes
  • 1 cup breadcrumbs panko preferred
  • 2 eggs beaten
  • 2 tbsp butter melted
  • parsley for garnish
  • ranch dressing for dipping

Equipment

  • Air fryer or oven
  • Baking sheet
  • Mixing bowls
  • Tongs

Method
 

  1. Season chicken pieces with salt, pepper, garlic powder, onion powder, paprika, and ranch seasoning.
  2. Stuff each chicken piece with a cube of mozzarella.
  3. Dip chicken in beaten eggs, then coat in breadcrumbs.
  4. Air fry at 400°F for 10–12 minutes or bake at 425°F for 18–22 minutes.
  5. Brush with melted butter and garnish with parsley.
  6. Serve with ranch dressing for dipping.

Notes

Freeze mozzarella cubes briefly to prevent cheese from leaking during cooking.
