Ingredients
  

Casserole
  • 500 g ground beef
  • 1 cup white rice uncooked
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 2 cups tomato sauce
  • 2 cups beef broth
  • 1 cup black beans drained
  • 1 cup corn
  • 2 cups cheddar cheese shredded

Method
 

  1. Brown ground beef with onion and garlic in a skillet.
  2. Stir in taco seasoning and tomato sauce.
  3. Combine uncooked rice, beef mixture, beans, corn, and broth in a baking dish.
  4. Cover and bake until rice is tender.
  5. Top with cheese and bake uncovered until melted.

Let rest before serving so the casserole sets slightly.
