  • 1 lb Mexican chorizo casing removed
  • 4 medium russet potatoes peeled and diced
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil optional
  • 0.5 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp salt to taste
  • 0.25 tsp black pepper
  • 0.25 cup fresh cilantro chopped
  • Lime wedges for serving
  • Queso fresco for garnish
  • Tortillas for serving

Method
 

  1. Peel and dice potatoes. Place them in water to remove excess starch.
  2. Cook chorizo in a skillet over medium heat for 6–8 minutes, breaking it apart. Remove and set aside.
  3. Sauté onion and garlic in the same pan until softened.
  4. Add drained potatoes, season with paprika, cumin, salt, and pepper. Stir well.
  5. Cover and cook 12–15 minutes, stirring occasionally, until potatoes are tender.
  6. Return chorizo to the pan and cook 3–5 minutes longer.
  7. Garnish with cilantro, queso fresco, and serve with tortillas and lime wedges.

Notes

Serve Papas con Chorizo as tacos or with eggs for breakfast. Adjust spice to your preference.
