Ingredients
  

Mexican Street Corn Salad
  • 4 cups corn kernels fresh, canned, or frozen
  • 2 tbsp butter for charring
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream or Mexican crema
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 clove garlic minced
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup fresh cilantro chopped
  • 3 green onions sliced
  • salt to taste
  • black pepper to taste
  • lime wedges for serving

Method
 

  1. Heat butter in a skillet and char the corn kernels for 5–7 minutes.
  2. Whisk together mayonnaise, sour cream, lime juice, chili powder, paprika, garlic, salt, and pepper.
  3. Add charred corn to the dressing and stir to combine.
  4. Mix in cilantro, green onions, and cotija cheese.
  5. Taste and adjust seasoning.
  6. Garnish with more cotija and cilantro before serving.

Notes

For the best flavor, char the corn deeply and serve with extra lime juice.
