Ingredients
  

Shortbread Base
  • 1 cup (2 sticks) unsalted butter softened
  • 0.5 cup granulated sugar
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
Caramel Layer
  • 1 cup (2 sticks) unsalted butter
  • 1 cup brown sugar packed
  • 1 can (14 oz) sweetened condensed milk
  • 0.25 cup light corn syrup optional
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
Chocolate Topping
  • 2 cups chocolate chips semi-sweet or milk
  • 2 tablespoons butter or heavy cream for shine
  • sea salt flakes optional for garnish

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x13-inch pan with parchment paper.
  2. Make shortbread by creaming butter, sugar, and vanilla, then mix in flour and salt.
  3. Press dough into pan and bake 20–25 minutes until lightly golden.
  4. For caramel, cook butter, sugar, condensed milk, and corn syrup until golden and thick.
  5. Add vanilla and salt, pour over shortbread, and let set 30–45 minutes.
  6. Melt chocolate with butter or cream, spread over caramel, and chill until firm.
  7. Slice into bars and garnish with sea salt flakes.

Notes

Use a sharp knife dipped in hot water for clean slices. The bars taste even better the next day!
