Ingredients
  

  • 2 cups shredded cooked chicken
  • 1 packet taco seasoning
  • 1/3 cup water
  • 12 mini taco shells
  • 1 cup shredded cheddar or Mexican cheese
  • 1/4 cup salsa optional
  • 2 tbsp olive oil for brushing
  • fresh cilantro for garnish
  • lime wedges for serving

Equipment

  • Baking sheet

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet.
  2. Heat shredded chicken with taco seasoning and water in a skillet until coated and warm.
  3. Fill mini taco shells with chicken mixture and top with cheese.
  4. Arrange on baking sheet and brush edges lightly with olive oil.
  5. Bake 8–10 minutes until cheese melts and shells are crisp.
  6. Garnish with cilantro and serve with lime wedges.

Notes

Great for parties or meal prep. Use rotisserie chicken to save time.
