Miso Glazed Melting Sweet Potatoes

Thick-cut sweet potatoes roasted until tender and glazed with a glossy miso-butter-maple sauce. Sweet, savory, and perfect for Easter.

Ingredients
  

Sweet Potatoes
  • 3-4 sweet potatoes cut into 1.5-inch rounds
  • 2 tbsp olive oil
  • salt and pepper to taste
Miso Glaze
  • 3 tbsp white miso paste
  • 3 tbsp unsalted butter melted
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 2 tsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp sesame oil
Finishing & Garnish
  • sesame seeds
  • chives or green onions sliced

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 425°F and slice sweet potatoes into thick rounds.
  2. Toss with olive oil, salt, and pepper and arrange on a baking sheet.
  3. Roast 20 minutes, flip, and roast another 15–20 minutes.
  4. Whisk together miso glaze ingredients until smooth.
  5. Brush glaze generously on both sides of potatoes.
  6. Bake 10–12 minutes until caramelized.
  7. Garnish with sesame seeds and chives.

Notes

White miso gives the best balance of sweetness and umami for glazing.
