Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup mini marshmallows plus extra for topping
  • 1 cup chocolate frosting homemade or store-bought
  • 1 cup marshmallow fluff or whipped topping
  • 1/4 cup chocolate syrup for drizzling

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add butter, eggs, buttermilk, and vanilla; mix until smooth.
  4. Fold in mini chocolate chips.
  5. Fill liners 2/3 full and bake 18–20 minutes.
  6. Cool completely before frosting.
  7. Spread marshmallow fluff on each cupcake.
  8. Pipe chocolate frosting on top.
  9. Garnish with mini marshmallows and chocolate drizzle.
