  • 12 oz spaghetti cooked until al dente
  • 2 cups cooked shredded chicken rotisserie or homemade
  • 6 slices bacon cooked and crumbled
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 1 can (10 oz) diced tomatoes with green chiles drained
  • 1.5 cups heavy cream
  • 1 cup chicken broth
  • 2 cups Monterey Jack cheese divided
  • 0.5 tsp paprika
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 0.25 tsp crushed red pepper flakes optional
  • 2 tbsp chopped parsley for garnish

Method
 

  1. Cook spaghetti in salted boiling water until al dente. Drain and set aside.
  2. Cook bacon until crispy, crumble, and reserve 1 tablespoon of bacon fat.
  3. In the same skillet, sauté onion in butter and olive oil until translucent, then add garlic.
  4. Add chicken broth, heavy cream, diced tomatoes, and seasonings. Simmer until thickened.
  5. Stir in 1 ½ cups of cheese until melted, then add chicken and spaghetti. Mix well.
  6. Pour mixture into baking dish, top with remaining cheese and bacon, and bake at 350°F for 25 minutes.
  7. Garnish with parsley before serving.
