- Cook spaghetti in salted boiling water until al dente. Drain and set aside.
- Cook bacon until crispy, crumble, and reserve 1 tablespoon of bacon fat.
- In the same skillet, sauté onion in butter and olive oil until translucent, then add garlic.
- Add chicken broth, heavy cream, diced tomatoes, and seasonings. Simmer until thickened.
- Stir in 1 ½ cups of cheese until melted, then add chicken and spaghetti. Mix well.
- Pour mixture into baking dish, top with remaining cheese and bacon, and bake at 350°F for 25 minutes.
- Garnish with parsley before serving.
