Method
- Combine warm water, yeast, and sugar. Let sit 5 minutes until foamy.
- Add salt, flour, and melted butter; knead until smooth dough forms.
- Place dough in greased bowl, cover, and let rise 1 hour.
- Preheat oven to 450°F (230°C). Line baking sheets with parchment paper.
- Divide dough into 8 pieces. Roll into ropes, flatten, place mozzarella inside, seal edges, and shape into pretzels.
- Bring water and baking soda to a boil. Dip pretzels 30 seconds each, remove with slotted spoon.
- Place on baking sheets, brush with egg wash, sprinkle with coarse salt.
- Bake 12–15 minutes until golden brown. Serve warm.
Notes
For extra flavor, brush baked pretzels with melted garlic butter before serving.
