Ingredients
  

Pretzel Dough
  • 1.5 cups warm water 110°F/45°C
  • 2.25 tsp active dry yeast 1 packet
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 4 cups all-purpose flour
  • 2 tbsp unsalted butter melted
Stuffing & Boiling
  • 8 mozzarella cheese sticks or block mozzarella cut into sticks
  • 10 cups water
  • 0.66 cup baking soda
Topping
  • 1 egg beaten, for egg wash
  • coarse sea salt for sprinkling

Method
 

  1. Combine warm water, yeast, and sugar. Let sit 5 minutes until foamy.
  2. Add salt, flour, and melted butter; knead until smooth dough forms.
  3. Place dough in greased bowl, cover, and let rise 1 hour.
  4. Preheat oven to 450°F (230°C). Line baking sheets with parchment paper.
  5. Divide dough into 8 pieces. Roll into ropes, flatten, place mozzarella inside, seal edges, and shape into pretzels.
  6. Bring water and baking soda to a boil. Dip pretzels 30 seconds each, remove with slotted spoon.
  7. Place on baking sheets, brush with egg wash, sprinkle with coarse salt.
  8. Bake 12–15 minutes until golden brown. Serve warm.

Notes

For extra flavor, brush baked pretzels with melted garlic butter before serving.
